Aloo Palak (Potato Spinach Curry)

Aloo Palak or Potato Spinach curry is a easy and healthy  recipe which comes together quickly and can be enjoyed with roti, naan or rice alike. This recipe is an ideal one for quick and easy weekday meal which does not require any preparations in advance and also a healthy, nutritious meal.


There are different ways to cook potatoes for this dish. You can fry potatoes separately in a non-stick pan and add it after onions and tomatoes are done. This will need some additional oil or ghee to fry potatoes. Another way would be to skip oil and boil potatoes instead which would be another healthier version. I am cooking potatoes in the same sauce pan which cuts down some time and also I feel this is an easy and quicker version as everything is cooked in the same pot. You can try either ways to cook potatoes which suit your cooking style and taste.




Aloo Palak Sabji

Ingredients -

  • Baby Potatoes, 8, chopped in 1 inch cubes

  • Spinach, 1 bag, chopped

  • Red Onion, 1/2 medium sized, fine chopped

  • Tomato, 1, fine chopped

  • Cumin seeds, 1 tbsp

  • Green chillies, 2, fine chopped

  • Garlic, 2, fine chopped

  • Hing (Asafoetida), 1/2 tsp

  • Dried Red chilly, 1

  • Oil, 2 tbsp

  • Ghee, 1 tbsp

  • Salt, 2 tsp

  • Garam masala, 1 tbsp

  • Turmeric, 1 tsp

  • Water, 1 cup


Recipe -

In a sauce pan, heat oil and ghee. Add cumin seeds and let it sputter. Then add in fine chopped green chilies, whole red chilli, garlic fine chopped, hing (aesophotida powder). Give it a quick stir.

Add fine chopped onion. Let it cook for 5-6 mins on medium flame. Let onions turn translucent.

Add in fine chopped tomato. Let it cook for another 3 mins.

Add in potatoes cubes with 2 tsp salt and 1 tsp turmeric. Sprinkle some water, stir and cover. Let it cook on medium heat for 10 mins stirring every 3-4 mins. Sprinkle water if necessary if potatoes start sticking to pan.

Add in 1 tbsp garam masala. Stir and cook for another 5 mins. 

Add in chopped spinach. Stir and let it cook for about 8 mins on medium heat.


Sprinkle some lime juice and Aloo palak is ready to serve with some hot rotis or naan. Enjoyyy.
