Gobi Paratha / Cauliflower Paratha

Gobi/ Cauliflower Paratha


Ingredients-

  • Cauliflower, minced, 2cups

  • Onions,1/2 cup, fine chopped

  • Garlic, 2

  • Green Chillies, 3

  • Oil, 2 tbsp

  • Cumin seeds, 1 tbsp

  • Salt , 1 tbsp

  • Chilli powder, 1 tsp

  • Cumin powder, 1 tsp

  • Lime juice, 2 tbsp

  • Wheat Flour, 2 cups

  • Water, 1 cup

  • Ghee, 2 tbsp


Recipe:

For Stuffing

For making minced cauliflower mixture add 8-10 florets in a processor with garlic cloves and green chillies. Blend for 3-5 secs and keep the mixture coarse. Do not make a paste.


Add 1 tbsp oil in a pan on medium flame. Add cumin seeds and when they start to sputter add 1/2 cup chopped onions and cook for 1 min. Let it cook for 2 mins and then add minced cauliflower mixture. Cook for another 4-5 mins stirring every minute and then add spices and salt and lime juice. Cook for another min and turn off the flame and let it cool down completely.


For Dough

Take 2 cups of wheat flour in a bowl and add salt. Mix well.

Add ¼ cup water and knead dough. Add another ¼ cup now and keep kneading the dough. Add oil after kneading for about 3-4 min and make smooth and soft dough. Add little water if needed. Do not add all water at once you will end up with a sticky or thick dough which won’t be possible to hold the stuffing. Knead smooth dough. When it is done apply another 1 tsp oil and cover the bowl. Let it rest for 20 mins.


For Paratha

Dust some flour on the surface you will roll the parathas on. Take a part of dough according to serving size and dust it in flour and make a round ball. Roll the dough and keep it a little thick. Then put some of stuffing in the center of rolled tortilla and cover the filling by pulling the edges together.

Fatten the dough so the stuffing spreads evenly inside and dust some flour again on both sides before you start rolling. Roll until medium size of tortilla is obtained.

Place a pan on medium heat and put 1 tsp ghee/oil and transfer the paratha on pan. Apply ghee/oil on either sides when it is cooking and when golden brown spots start appearing you know it’s ready.


Serve with spicy chutney and ketchup or with plain yogurt and pickle.
