A popular breakfast food with a slight variation in traditional idli recipe this recipe can be made without any overnight fermentation or soaking and grinding rice and lentils.
Rava idli is made with curd and rava(semolina) and is just so delicious and turn out to be a kind of must try simple and easy recipe served with spicy coconut chutney and sambar.

Rava Idli
Ingredients-
Rava (Semolina), 2 cups
Curd, 1 cup
Water, 1/2 cup
Oil, 2-3 tbsp (For greasing the moulds)
Carrot, grated, 1 cup
Salt, 1 tbsp
Cumin seeds, 1 tbsp
Mustard seeds, 1 tsp
Urad dal, 2 tbsp
Green chillies, fine chopped, 2 tbsp
Dry red chillies, 2 count
Curry leaves, fine chopped, 6-8 count
Cashews, chopped, 4-6
Cilantro, fine chopped, 1 cup
Recipe-
For Rava Idli batter:
Add 2 cups rava/sooji in a bowl. Add salt with 1 cup curd. Mix well adding 1/2 cup of water and let it sit aside for atleast 30 mins. Batter should be a little thick and not too flowy.

For Tadka:
Add oil in a pan on medium heat. Add cumin seeds, mustard seeds, urad dal. Let it temper.
Then add chopped green chillies, dry red chillies, curry leaves and chopped cashews. Saute on low heat for 10-15 seconds.
Add 1 cup grated carrots and let it cook for about a min. Keep the heat low and saute throughout.
Add the tadka into the batter and mix well.
Add water and mix to adjust consistency. Batter should be a little thick and not too flowy in consistency. So do not add too much water.
For steaming Idli:
Grease the moulds with oil and pour 2 scoop batter in each and steam for about 12 mins in a cooker or idli steamer. Check after 12 mins with a toothpick and remove if cooked completely.
Let it cool completely and then serve with spicy chutney or sambar.
