Uttapam – One of those healthy meal you can have for breakfast, lunch or dinner typically just any meal of the day.

South indian dosa (a thicker variety of dosa) made with fermented rice and urad dal batter serves healthy, nutritious and wholesome breakfast meal. Serve with sambhar and chutney or podi and enjoy a delightful breakfast.❤️💚
Uttapams can be made with different veggie toppings. There can be mixed veggie toppings, onion uttapam, tomato uttapam, cheese uttapam, podi masala uttapam.
Ingredients -
2 cups Rice soaked for 6 hours
1 cup Urad dal soaked for 6 hours
1 cup Poha soaked for 5 minutes
1 tsp methi/fenugreek seeds soaked 6 hours
Ginger, 1 tbsp, fine chopped
Cilantro, 2 cups, fine chopped
Green chillies, 4-5, fine chopped
Red onions, 1 cup, fine chopped
Tomatoes, 1 cup, fine chopped
Carrots, 1 cup, grated
Green bell pepper, 1 cup, fine chopped
Salt, 1 tbsp
Chilli powder, 1 tsp
Ghee, 2 tbsp
Shredded coconut, 2 tbsp
Lime juice, 1 tbsp
Recipe -
🔷 For Batter -
Soak rice and urad dal atleast 6 hours in separate bowls and soak 1 tsp fenugreek/methi seeds with rice.
Blend urad dal and make a smooth paste. Blend rice and methi with soaked poha into a smooth paste.
Now mix both the mixtures together and let it sit to ferment at least 2 days. Uttapam batter needs to be a little more fermented than dosa batter. When ready to make uttapam, Add 1 tsp salt and mix the batter well.
Note - *Add ½ cup water or as much needed if the batter is too thick and mix well. Batter should neither be very thick nor of a flowing consistency. We are looking for a pancake batter kind of consistency here to make fluffy and soft uttapams*
🔷 For Uttapam -
Combine the chopped onions, tomato, carrot, capsicum (green bell pepper), chillies and ginger in a bowl and give it a mix. Add 1/2 cup cilantro. Add some salt to taste.
Heat an iron skillet on medium heat for 1-2 minutes. Grease with ½ tbsp ghee/oil once hot.
Take a ladleful of batter and pour in the center. Spread gently.
Sprinkle some chilli powder on top of batter and then sprinkle the mixed veggies over it.
Note - *Press the veggies a little to make them stick to the batter*
Put ½ tbsp ghee/oil on the edges and on top and cover the pan. Let it cook for 1-2 minutes on medium flame.
Take out the lid and flip the uttapam. Let it cook for 1-2 minutes on the other side.
Take it out on a plate and continue the steps for rest of the uttapam.
🔷 For Coriander Chutney -
In a blender, add 1 cup coriander, 1 cup shredded unsweet coconut, 1 inch ginger, 2 green chillies, 2 tbsp lime juice, about 3 tbsp water and blend together to make a smooth paste. Add salt to taste.
