Mix Vegetable Paratha

Parathas are one of those healthy options which can be served in any meal of the day and with such perfect flavorful stuffing of cauliflower, carrots, onions paired with curd and spicy chutneys altogether makes them such a healthy and wholesome meal.


Mix Vegetable Paratha

Ingredients -

  • Cauliflower, minced, 2 cups

  • Garlic, 2 cloves

  • Green Chillies, 3

  • Oil, 2tbsp

  • Cumin seeds, 1 tbsp

  • Onion,1/2, fine chopped

  • Carrots, 1, grated

  • Salt, 1 tbsp

  • Chilli powder, 1 tbsp

  • Garam masala powder, 1 tsp

  • Cumin powder, 1 tsp

  • Lime juice, 2 tbsp

  • Wheat Flour, 2 cups

  • Water, 1 cup

  • Ghee, 2 tbsp


Recipe-


For Stuffing:

For making minced cauliflower mixture, add 8-10 florets in a processor with garlic cloves and green chillies. Blend for 4-5 secs and keep the mixture coarse. Do not make a paste.


Add 1 tbsp oil in a cook pot on medium flame. Add cumin seeds and when they start to sputter add 1 cup chopped onions and cook for 1 min. Add grated carrots and mix. Let it cook for 2 mins and then add minced cauliflower mixture. Cook for another 5 minutes stirring every minute and then add spices and salt with lime juice. Cook for another 2 minutes and turn off the flame and let it cool down for next 30 mins. Do not cover with lid, let mixture cool completely.


For Dough:

Take 2 cups of wheat flour in a bowl and add salt. Mix well.

Add ¼ cup water and knead dough. Add another ¼ cup now and keep kneading the dough. Add oil after kneading for about 3-4 min and make smooth and soft dough. Add little water if needed. Do not add all water at once you will end up with a sticky or thick dough which won’t be possible to hold the stuffing. So keep adding water slowly and knead smooth dough. When it is done. Apply another 1 tsp oil and cover the bowl. Let it rest for 15-20 mins.


For Paratha:

Dust some flour on the surface you will roll the parathas on. Take a part of dough according to serving size and dust it in flour and make a round ball. Roll the dough and keep it a little thick. Then put some of prepared stuffing in the center of rolled tortilla and cover the filling by pulling the edges together.

Slightly flatten the dough so the stuffing spreads evenly inside and dust some flour again on both sides before you start rolling. Gently roll until medium size of tortilla is obtained.

Place a griddle on medium heat and put 1 tsp ghee/oil and transfer the paratha on griddle. Apply ghee/oil on either sides when it is cooking and when golden brown spots start appearing you know it’s ready.

Serve with some spicy coriander chutney and tomato ketchup or also with yogurt and pickle.
