Pav Bhaji

This dish needs no introduction for any Indian out there !!

A dish originating as a street food of Mumbai and soon making its way not just to different regions of India but also to hearts of many !! 💖

Pav Bhaji is basically mashed and spicy vegetable curry (Bhaji) served with toasted buttery Buns (Pav) and topped with chopped cilantro, onions and lime juice 😋




This particular pressure cooker recipe is easy and quick with no compromise on the taste plus a tried and tested winner for my potlucks and a perfect meal for a group of friends coming over. Multiple ways of making pav bhaji would be using pressure cooker, using crock pot and even mashing all boiled vegetables with spices on a tawa(large skillet) which is exactly how they make it on the street stalls in Mumbai.



This humble recipe has been my favorite since childhood. There are number of variants of this dish depending on which region of India you try out pav bhaji. Let us quickly go through the pressure cooker recipe as this comes together in just an hour and can be devoured upon as soon as its ready with butter loaded pav(bread rolls), lime juice, fine chopped onions and fresh cilantro.


Pav Bhaji

Ingredients -
  • Butter, ½ cup, unsalted

  • Red onions, 2, finely chopped

  • Tomatoes, 2, finely chopped

  • Cauliflower, 1, whole, roughly chopped into florets

  • Green bell pepper, 1, finely chopped

  • Frozen green peas, 1 cup

  • Potatoes, 3, roughly chopped

  • Cilantro, 1 cup, finely chopped

  • Lime, 2, cut into wedges

  • Pav, 1 packet

  • Salt, 2 tbsp

  • Pav Bhaji Masala, 3 tbsp

  • Red chili powder, 1 tbsp

  • Garam masala powder, 1 tsp

  • Coriander powder, 1 tsp


Recipe -


Peel the Potatoes and roughly chop them into pieces. Add to a pressure cooker along with cauliflower florets, finely chopped green bell pepper/capsicum. Add frozen green peas to this with 1 tsp salt. Add 4 cups of water and cook until 6 whistles. Turn off the heat and let the pressure cooker cool down. In a large pan on medium heat, add 2 tbsp butter. To that add 1 large red onion, finely chopped and cook until onions turn translucent. Now, add finely chopped tomatoes and cook until tomatoes are all cooked and soft. Now, add 1 tbsp each of red chilli powder, 1 tsp each of garam masala and coriander powder, 3 tbsp pav bhaji masala and 1 tbsp salt. Cook for a minute and then add the boiled vegetables to this pan. Add 2 cup water and let all vegetables cook together for about 5 minutes. Now, using a potato masher, mash all the vegetables into a paste like consistency. Add 1 cup water and let it simmer for 8-10 minutes on medium heat. Turn off the heat and add 2 tbsp butter, 1 cup chopped cilantro and juice of 1 lemon. Mix well. Serve it with butter toasted buns and do not forget to enjoy by topping some more of chopped red onions, cilantro and lemon juice !!
