Penne Masala Pasta

Pasta is a bowl of comfort food for many and there are many different sauces for Pasta which can come together with just a few simple ingredients. This masala pasta is my twist of Indian flavors for a quick weeknight meal which is a quick and easy recipe and a delicious comfort meal.



Penne Masala Pasta

Ingredients-

  • Penne Pasta, 2 cups

  • Water, 4 cups

  • Olive oil, 2 tbsp

  • Butter, 2 tbsp

  • Salt, 3 tsp

  • Chilli flakes, 1 tbsp

  • Garlic, 2, fine chopped

  • White Onion, 1/2, fine chopped

  • Tomatoes, 3, chopped and blended

  • Chilli Powder, 1 tsp

  • Basil, fresh, 4

  • Italian seasoning, 1 tsp

  • Dried parsley, 1 tsp

  • Grated parmesan, 3 tbsp

  • Lemon juice, 1 tsp


Recipe

  1. Take 4 cups of water in a saucepan and put 1 tbsp olive oil with 1 tsp salt. Let the water come to boil and then put 2 cups of penne pasta in. Cook until al dente (all cooked but still firm to bite. So not all mushy). Add in 1 tbsp olive oil and stir pasta well to not become sticky.

  2. Blend together 2 tomatoes, 1-2 basil leaves, 1/2 tsp salt. Make a smooth paste.

  3. In a saucepan, heat 2 tbsp butter. Add in 2 garlic cloves, fine chopped, chilli flakes and stir for a few seconds.

  4. Now, add in onions and cook until onions are soft & translucent (not brown) and add in the blended tomato paste. Cook for roughly 5-7 minutes until there is no excess water and then add in 1 tsp each of chilli powder, dried parsley and Italian seasoning, salt and 2 tbsp grated parmesan.

  5. Give a quick stir and add in the cooked pasta. Stir to mix everything well and turn of the heat.

Serve hot and garnish with some chopped basil, grated parmesan, italian seasoning. Sprinkle some lemon juice and Enjoy !!
