An easy and healthy vegetarian, vegan curry which comes together in one pot and a satisfying meal full of flavors from Indian spices and curry powder. Pair it up with some steaming hot rice or roti and enjoy this delicious vegan, vegetarian pumpkin peas curry.
This recipe does require some preparation like soaking white peas in water at least 4 hours.
Pumpkin Peas Curry
Ingredients -
Pumpkin, 400 gm, cut 1 inch blocks
White Peas, 1 cup, soaked atleast 4 hours
Mustard seeds, 1 tbsp
Cumin seeds, 1 tbsp
Green chillies, 4, fine chopped
Curry leaves, 6-8
Bay leaves, 2
Hing (Asafoetida), 1/4 tsp
Dried Red chillies, 2
Oil, 3 tbsp
Salt, 2 tsp
Chilli powder, 1 tsp
Curry powder, 1 tsp
Garam masala, 1 tsp
Turmeric, 1 tsp
Cilantro, 1 bunch, fine chopped
Water, 3 cups
Recipe -
Wash and soak in 1 cup white peas in water overnight or atleast 4 hours.
In a pressure cooker, transfer these soaked peas along with bay leaves, 3 cups water, 1 tsp salt, 1/2 tsp turmeric and cook for 5 whistles. Let it cool down.
Add 2 tbsp oil in a pan on medium heat. Add 1 tbsp cumin seeds, 1 tbsp mustard seeds and let it temper. Then add 6-8 curry leaves, 2 red chilies, 3 fine chopped green chilies and 1/2 tsp hing (asafoetida powder). Now, Add chopped pumpkin cubes. Stir well and cover. Let it cook for 7-8 mins on low flame. Now, add 1 tsp salt and transfer in the pressure cooked peas. Add 1 tsp each of red chili powder, curry powder and garam masala. Cover and cook for another 7-8 mins on low flame.
Garnish with fresh chopped coriander and serve this hot with Roti or even Rice.
