Sev Puri Chaat

Being a mumbaikar it is quite difficult to stay away from those spicy, sweet, tangy and savory street snack for a long time !! šŸ™†šŸ˜‹

One such go-to street food is sev puri chaat and this is such snack which is simple and easy to assemble and also crunchy and tasty topped with chaat masala and with blend of all its flavors elements.ā¤ļøšŸ§”šŸ’›



For puri in this recipe, we can either use the store bought or we can easily bake these at home which adds some extra minutes to the recipe. Also once you create a batch of these baked puri you can keep them in an air tight container easily for about 2 weeks.

You can also make these puri using rava/sooji flour, chickpea flour, all purpose flour or even using whole wheat flour or multigrain flour. Traditionally, these are made with all purpose flour and deep fried. The one used in this recipe are made with mix of whole grain flour and sooji(rava) and are baked instead of frying. You need to add rava either when you are using all purpose flour to make these puris crunchy instead of soft like tortillas !


When you have the puri ready then the next thing in making aloo sev puri is just assembling the dish together. This recipe is also a go-to snack option if you have all ingredients at home since it comes together in just a few minutes.





Sev Puri Chaat

Ingredients for Puri -

  • 2 cups of whole grain flour

  • 1/2 cup sooji (rava)

  • 1 cup water

  • 1 tbsp salt

  • 4 tbsp cooking oil

Ingredients for Cilantro chutney -

  • 3 cups fresh cilantro

  • 1 clove of garlic

  • 1 inch ginger

  • 3 green chillies

  • 1 lime

  • Salt

Ingredients for Tamarind chutney -

  • Tamarind deseed

  • 2 tbsp grated jaggery powder

  • 1 tsp ginger powder

Ingredients for Sev Puri Chaat -

  • 1 onion, finely chopped

  • 2 boiled potatoes cut into small cubes

  • 2 tomatoes, fine chopped

  • Green chillies, 3, fine chopped

  • Fresh cilantro, 2 cups, fine chopped

  • Chaat masala, 2 tbsp

  • Sev, 1 cup

  • Lime juice, 2 tbsp


Recipe -

Wholegrain Flour and sooji Puri -

Add multi grain flour, sooji and salt in a wide pot to knead. Mix them dry and then adding water slowly knead the dough. Knead by adding and oil slowly and in little amounts. Once the dough is smooth, brush it with some oil and let it sit for 15-20 mins.

Then make small balls and roll them into tortillas. Use a circle cutter and cut small and even shaped circles. Poke these with fork before you put those in a baking pan. Spread these out on pan.

You can either deep fry these small puri or you can bake these. For baking, preheat the oven to 360 degrees F each side. Bake for about 5-6 mins on each side. They should turn slight brown once done on both sides. Remove them out immediately and transfer into another plate and let them sit for about 10 mins.


Cilantro chutney -

In a blender, add cilantro, garlic clove, green chillies, ginger, 2 tbsp lime juice, 4 tbsp water, Ā¼ tsp salt and blend together to make a smooth paste.


Tamarind chutney -

Soak 4-5 tamarinds in hot water for 15 mins and then mash with hands to a paste. Add grated jaggery and ginger powder. Mix well and adjust consistency by adding water.


Sev Puri assemble -

Place the puris (baked wheat flour and sooji/rava papdi) on a plate. Place a little boiled potatoes on each then add some finely chopped onions and tomatoes and chopped chillies. Sprinkle some chaat masala on each.


Then top some spicy chutney and sweet tamarind chutney on each.


Top it all with sev and garnish with some fresh coriander on each. Do sprinkle some lime juice, chaat masala and there you go, enjoy this spicy and tangy street food.
