These cookies are a wholesome and satisfying snack option, packed with fiber-rich oats and naturally sweetened with mashed bananas. They’re easy to make, totally dairy-free and egg-free, and perfect for on-the-go munching or a cozy afternoon snack option.

I am using oats flour for these and skipping the traditional all purpose flour. To make oats flour, you can simply put oats (rolled or quick oats) in a blender and add about 1/4 tsp salt to it. Blend for a few seconds.

To sweeten these cookies, I have used mashed overripe bananas and peanut butter as I wanted to make them a healthier snack option.

For toppings, you can customize them with add-ins like raisins, dark chocolate chips, or chopped nuts!

Vegan Oatmeal Choco chip Cookies

Ingredients -

  • Quick oats flour, 3 cups

  • Cocoa powder, 1 cup

  • Salt, 1/4 tsp

  • Oil (spray)

  • Overripe bananas, 2

  • Oat milk, 2 cups

  • Peanut butter (creamy), 3 tbsp

  • Dark Chocolate chips (dairy free) , 1 cup

Recipe -

  1. Add oats flour and cocoa powder to a large bowl and give it a mix.

  2. To a blender, add bananas, oat milk and peanut butter and blend for about 6-8 seconds till it is all blended.

  3. Pour in the wet ingredients into dry ingredients and mix well.

I am adding in dark chocolate chips to these cookies to my batter and mixing it. You can add in chopped nuts or raisins if you like.

  4. Since we have used oats flour in this recipe, the batter needs to rest for about at least 45 minutes so the oats absorb all the liquids and develop its structure. The batter should swell a little in size on e rested and all the liquids should be absorbed. We want a thick batter to scoop on the baking try.

  5. Preheat the oven to 360 degrees F. On a baking tray lined with parchment paper or baking sheet, spray some oil on the sheet so the cookies won't stick to the paper once baked.

  6. Scoop the batter using an ice cream scoop or a spoon and top with some more of those dairy-free dark chocolate chips. Let it bake at 360 degrees F for 16 minutes.

  7. Once done, let it cool down 15-20 minutes and then they are ready to serve and enjoy !!
