Vegetarian Pad Thai

This street food recipe is a sweet, savory and tangy meal which comes together in less than 40 minutes. My favorite part of quick and easy dinner meals is when you can customize by adding your favorite veggies and this pad thai recipe is just that meal.

Stir fry your choice of vegetables in a pan and toss in rice noodles with generous amount of delicious pad thai sauce and devour.


You can add in fish sauce if you are making a non-vegeterian pad thai. I have skipped fish sauce as this is my vegetarian take on making pad thai.


Pad Thai

Ingredients-

  • Flat Rice Noodles, about 6 ounces for 2 servings

  • Tofu, Firm, chopped 1 inch pieces

  • Water, 4 cups

  • Olive oil, 6 tbsp

  • Salt, 2 tsp

  • Garlic, 2, fine chopped

  • Red Onion, 1/2 small, sliced

  • Red Bell Pepper, 1 small, 1 inch pieces

  • Yellow Bell Pepper, 1 small, 1 inch pieces

  • Carrots, 1 small, round pieces

  • Broccoli, 1 small, roughly chopped 6-8 florets

  • Basil, fresh, 4 leaves

  • Green onions, 3 , fine chopped


Pad Thai Sauce

Ingredients-

  • Low sodium Soy sauce, 3 tbsp

  • Tamarind paste, 1 tbsp

  • Brown sugar, 1/2 tsp

  • Creamy peanut butter, 2 tbsp

  • Olive oil, 1 tbsp

  • Lime Juice, 2 tbsp

  • Chilli flakes, 1 tsp

  • Sesame seeds, 1 tbsp

  • Salt, 1/4 tsp


Recipe  

For sauce -

  • Add in soy sauce in a bowl, with salt, chili flakes and peanut butter. Mix thoroughly till everything is combined.

  • Add in lime juice, tamarind paste, olive oil and brown sugar. Mix well using a whisk so everything is well combined and the sauce should be of flow-y consistency. Add in sesame seeds to the sauce.

  • You can add a couple tbsp of water with a tbsp of olive oil and mix well to make it flow-y consistency. Keep it aside.


For vegetables and noodles-

  1. In a sauce pan, add 4 cups of water with 1 tsp salt ,and 1 tbsp oil. Bring it to boil. Add in rice noodles and cook gently for 6-8 mins or as instructed on packet. Stir every 2 mins to avoid it becoming sticky.

    Note - Drain off the water immediately once heat is turned off or the noodles will become sticky if they sit longer in the starchy water.


  2. In a non stick pan, on low heat, add 2 tbsp olive oil. Add in 1 tsp paprika powder(if you too like to add a little spice to your pad thai) and salt per taste. Add in tofu pieces and cook them for about 3-4 minutes, tossing to cover all sides. I like to cook tofu till they turn slightly golden brown. Remove from pan and keep aside.

  3. In the same pan on medium heat, add 2 tbsp olive oil, and add in chopped garlic. Let it cook on for a few seconds, then add in onions and cook about a minute till it becomes slightly golden. Then, add in bell peppers and cook about 3-4 minutes. Add in carrots, broccoli and cook for 2 minutes, stirring continuously so the vegetables don't burn.

  4. Now, add in cooked tofu and the sauce to the vegetables. Toss them all in the sauce and add in the rice noodles and basil leaves. Gently stir to coat noodles and vegetables with sauce.


  5. Once plated, add in some green onions to garnish and enjoyy.
