A Friday night frequent dinner bowl in my home has been this recipe of creamy pasta with a spicy twist of flavors on salmon paired with a glass of wine and a good movie. This fusion pasta is my another attempt of adding in some spice to my pasta recipes and having a delicious and comforting dinner bowl.
Fusion Pasta
Ingredients-
Pappardelle Pasta nests, 3
Water, 5 cups
Olive oil, 4 tbsp
Butter, 2 tbsp
Salt, 3 tsp
Chilli flakes, 1 tbsp
Garlic, 2, fine chopped
White Onion, 1 small, roughly chopped
Tomatoes, 2, chopped and blended
Red bell pepper, 1/2, roughly chopped
Half and Half, 1 cup
Salmon fillets, 3 , cut in 1 inch cubes
Chilli Powder, 1 tbsp
Garam masala powder, 1tbsp
Turmeric, 1/2 tsp
Lime juice, 2 tbsp
Basil, fresh, 2
Italian seasoning, 1 tsp
Dried parsley, 1 tsp
Recipe
In a sauce pan, add 5 cups of water with 1 tsp salt ,and 2 tbsp oil. Bring it to boil. Add in pasta and cook gently for 10-12 mins or as instructed on packet. Stir every 2 mins to avoid pasta becoming sticky. Drain off the water and add another tbsp olive oil to avoid pasta becoming sticky.
In air fryer, put 2 tomato cut into halves, small sized roughly chopped onion, 1 half red bell pepper. Spray some oil on each and cook at 370 F for 8 mins. Then transfer to blender and make a smooth paste.
In a bowl, Mix 1 tbsp each of chili powder, garam masala, 1/2 tsp turmeric, 1 tsp salt, 2 tbsp lime juice. Cut salmon to 1 inch cubes and coat the pieces with masala paste. Add 1 tbsp oil and mix well. Air fry salmon at 370 F for 10 mins.
In a sauce pan add 2 tbsp butter, add 2 garlic cloves, fine chopped. Then add in blended paste with 5 tbsp pasta water. Stir and cook for 2 mins. Add 1 tsp salt and 1 tbsp each of italian seasoning, dried parsley. Add in 1 cup of half and half (7-8 tbsp). Cook for 2 mins. Then turn off heat and add in air fried salmon with pasta. Gently stir to coat pasta with sauce. Plate it and sprinkle some chilly flakes, italian seasoning. Delicious, creamy bowl of pasta is ready to enjoy !!
