This pasta recipe comes together in no time and is one creamy, garlicy and saucy goodness which is bound to become a go-to sauce for a delicious pasta meal. Scallops pair well with white wine sauce but you can experiment with salmon or shrimps as well or just enjoy pasta in this sauce skipping any fish or meat and I am sure it would be equally delicious.
White wine sauce Pasta
Ingredients-
Spaghetti pasta, about 5 ounces for 2 servings
Water, 4 cups
White wine, 1 cup
Heavy cream, 1/2 cup
Butter, 2 tbsp
Olive oil, 3 tbsp
Salt, 3 tsp
Black pepper powder, 1 tsp
Chilli flakes, 1 tbsp
Garlic, 2, fine chopped
Parmesan, 1 tbsp, grated
Capers, 3 tbsp
Spinach, 1 cup, roughly chopped
Basil, fresh, 4
Italian seasoning, 1 tsp
Recipe
In a sauce pan, add 3 cups of water with 1 tsp salt ,and 1 tbsp oil. Bring it to boil. Add in spaghetti and cook gently for 12-15 mins or as instructed on packet. Stir every 2 mins to avoid pasta becoming sticky. Drain off the water and add a tbsp olive oil to avoid pasta becoming sticky.
In a plate, take required quantity of scallops, sprinkle salt and black pepper on each side. In a pan on medium heat, add 2 tbsp butter, and add in scallops. Let it cook on each side for roughly 3 mins till it gets golden brown on both sides. Remove scallops from pan to a plate.
In the same pan, add in 1 tbsp olive oil. Add 2 garlic cloves, fine chopped with 1 tbsp chili flakes. Stir and lower the flame and then add in 1 cup of white wine. Keep stirring and then add in 1/2 cup of heavy cream. Add 1 tsp each of salt, italian seasoning.
Keep stirring for 2 mins on low flame and then add in 3 tbsp capers and some chopped spinach (spinach is optional). Add in 3-4 basil leaves and give a quick stir. Then turn off heat and add in the pasta. Gently stir to coat pasta with sauce.
Plate the pasta and scallops in a bowl and add in spoonful of sauce on each scallops. Sprinkle with some italian seasoning and grated parmesan. Serve hot and Enjoyy !!
