Chicken Broccoli Casserole

A quick and healthy side for your meals which also serves a perfect meal prep recipe. Pair this up with rice or pasta or bread or have it like a salad and enjoy this delicious and tasty one pot meal.



Chicken Broccoli Casserole

Ingredients -

  • Chicken breast, 2

  • Broccoli florets, 3 cups

  • Sliced mushrooms, 2 cups

  • Olive oil, 4 tbsp

  • Paprika powder, 3 tbsp

  • Garlic powder, 1 tbsp

  • Cumin powder, 2 tbsp

  • Salt, 3 tsp

  • Italian seasoning or oregano, 1 tbsp

  • Grated cheddar cheese, 1 cup

  • Black pepper powder, 1/4 tsp


Recipe-


  1. Marinate Chicken Breast with 2 tbsp each of olive oil, paprika, garlic powder, cumin powder and salt.

Grill it on medium flame for 4-5 mins on both sides. Once done, cut and make roughly 1 inch cubes and set it aside.


  1. In a baking pan, apply 1 tsp oil on base and toss broccoli and mushroom in 1 tbsp each of oil, salt & paprika.


  2. Spread some broccoli florets and chopped mushroom on base. Then transfer in chicken cubes to the pan and spread some more broccoli and mushrooms on top.


  1. Layer with 1 cup grated cheddar cheese. Sprinkle 1/2 tsp salt and paprika with 1 tsp Italian seasoning or oregano.


  1. Bake in a preheated oven at 400 degrees F for 30 - 35 mins. Remove from oven once done and let sit for 5-10 mins.


  1. Garnish with some black pepper and more cheese if you like and it is ready to serve !!
