Chicken Fajita Rice

This one pot meal is cooked in just about 40 mins and at the end you get those loads of flavors when cooking chicken with rice along with bright colorful veggies !!


Chicken Fajita Rice is a vibrant and flavorful dish that combines tender chicken, assorted bell peppers, and onions with seasoned rice for a satisfying meal. Bursting with zesty fajita spices, this one-pan dish is a perfect balance of smoky, savory, and a hint of heat, making it both comforting and exciting. It's a simple yet delicious way to bring the bold flavors of fajitas to your dinner table!


You want to let it sit for about 30-40 minutes once the cooking is done. So, a note would be to make this recipe at least an hour or so ahead of your meal.



Chicken Fajita Rice

Ingredients -

  • Chicken thighs, 2

  • Rice, long grain basmati, 2 cups

  • Bell Peppers, red/green/orange 1 small each, sliced thinly

  • Red Onion, 1 , sliced

  • Tomato, 1, chopped

  • Lemon, wedges, thin sliced, 3

  • Garlic cloves, 2, fine chopped

  • Chili powder, 1 tbsp

  • Paprika powder, 1 tbsp

  • Garlic powder, 2 tbsp

  • Cumin powder, 2 tbsp

  • Onion powder, 1 tbsp

  • Coriander powder, 1 tbsp

  • Salt, 3 tsp

  • Water, 4 cups

  • Lemon juice, 2 tbsp

  • Cilantro, 1/2 bunch, fine chopped

  • Spring onions, 2, thin chopped


Recipe-


Chicken Marinate-

  1. Mix together 1 tbsp each of chili powder, cumin powder, coriander powder, garlic powder, onion powder with 1 tsp salt and 2 tbsp lemon juice. Mix well and let chicken pieces marinate for at least 2 hours.


    Cooking Instructions-

  2. In a pan on medium heat, add 4 tbsp oil and fry the chicken each side for about 5 mins.


  3. Keep it aside and in same pan add 4 fine chopped green chilies and garlic. Saute for a min and add 1 cup red onions chopped lengthwise. Cook for about 4 mins until slightly golden. Then add in chopped red, green and orange bell peppers. Let them cook for about 2 mins.


  4. Add in 1 tbsp paprika, garlic powder, onion powder, cumin powder and salt. Cook for a min and then add 2 cup rice (washed and drained) with 4 cups water.


  5. Add in those chicken pieces back with some lemon wedges and 1 tomato chopped fine.

    Cover and cook rice, vegetables and chicken on medium flame for 12 mins until all water is absorbed and rice is fully cooked.


    Once its done cooking, move the pan off heat and let it sit for about 30 mins.

    Garnish with fresh cilantro and spring onions and enjoy this colorful, comforting meal !!
