Another easy, simple yet bursting with flavors and spicy chicken curry for a weekend meal which can be enjoyed equally with naan or roti or rice for a healthy, protein packed and comforting homecooked meal.
Fish Curry
Ingredients -
Chicken, frozen or fresh
Onion, 2 medium sized, finely chopped
Tomatoes, 2, finely chopped
Green Chillies, 4, finely chopped
Garlic, 2 cloves, finely chopped
Ginger, 1 inch, grated
Ginger garlic paste, 2 tbsp
Red chillies, 4
Salt, 2 tsp
Chilli powder, 1 tbsp
Turmeric, 1 tsp
Garam masala powder, 1 tbsp
Chicken Masala, 2 tbsp
Oil, 4 tbsp
Ghee, 3 tbsp
Cinnamon stick, 1
Cloves, 6
Bay leaf, 2
Black pepper, 5-7
Lime juice, 1 tbsp
Cilantro, 1 cup, finely chopped
Water, 2 cups
Recipe
Chicken Marinate-
Mix together 2 tsp each of chilli powder, chicken masala, lime juice and 1 tsp each of turmeric, salt, 2 tbsp ginger garlic paste. Mix well and let chicken pieces marinate for at least 2 hours.
In a pan on medium heat, add 4 tbsp oil and 2 tbsp ghee. Then add in cinnamon stick, black pepper, bay leaves, cloves. Add chopped green chillies and dry red chillies. Then, add in chopped ginger garlic paste. Stir everything for a few seconds. Add 2 cups finely chopped red onions. Cook it until onions are translucent. Should take approximately 6-8 minutes. Add 2 cups chopped tomatoes. Cover and cook for 8 minutes. Now add in spices - chili powder, turmeric, 1 tsp salt. Add chicken masala. Let the spices cook for 1-2 mins. Once you can see oil starts secreting from the sides (after around 8 minutes) transfer the pieces of marinated chicken. Add 1 cup water and cover to cook for 15 mins on medium flame.
Add 1 cup water to adjust the gravy consistency, cover and let it cook again for 10 mins. Garnish with fresh cilantro and 2 tbsp lemon juice.
Serve hot with some Naan or Roti and Rice and enjoy.
