Chicken Skewers

Marinated chicken with all goodness of colorful vegetables on skewers can be a quick meal option served with some rice and rotis/tortillas making a complete meal.




Chicken Skewers

Ingredients -

  • Chicken boneless, chopped roughly 1 inch, frozen or fresh

  • Onion, 1 , chopped roughly 1 inch

  • Green bell pepper, chopped roughly 1 inch

  • Yellow bell pepper, chopped roughly 1 inch

  • Red bell pepper, chopped roughly 1 inch

  • Ginger garlic paste, 3 tbsp

  • Lime juice, 2 tbsp

  • Salt, 1 tbsp

  • Chilli powder, 1 tbsp

  • Turmeric, 1 tsp

  • Cumin powder, 1 tbsp

  • Chicken masala, 2 tbsp

  • Water, 2 cups in baking tray

  • Ghee, 3 tbsp

Recipe-

Chicken Marinate-

Cut chicken breast into approx 1 inch blocks and transfer into a bowl. Add chilli powder, chicken masala, lime juice, ginger garlic paste, turmeric, and salt. Mix well and let it marinate for atleast 8-10 hours or overnight.


Cut onions, bell peppers and any vegetables of your choice into roughly 1 inch pieces.


Soak skewers in water for atleast 30 mins to not let them burn while baking.


Now thread in the chicken pieces and vegetables onto the skewers. Place these on a baking pan and brush with some oil to each of these.

Bake in preheated oven to 380 degrees F for 30-40 mins.


Keep a try of water in the oven when baking to avoid chicken turning dry while baking.


Once done, sprinkle some lime juice and fresh cilantro and serve these hot kebabs with rice and roti. Enjoy !!
