Prawns Mushroom Curry

Combination of rice and curry never goes wrong when thinking about healthy and nutritious meal ideas. Tried this unique combination of prawns with mushroom curry with spinach which was quick to make and turned out to be a flavorful and delicious meal.


Prawns Mushroom Curry

Ingredients -

  • Prawns, frozen or fresh, 2 cups

  • Mushroom, sliced

  • Spinach, 2 cups, chopped roughly

  • Garlic, 2 cloves, finely chopped

  • Green Chillies, 3, finely chopped

  • Red chillies, 2, chopped roughly

  • Ginger, 1 inch, finely chopped

  • Onion, 1 small, finely chopped

  • Tomatoes, 1, finely chopped

  • Tamarind pulp, 3 tbsp

  • Salt, 1 tbsp

  • Chilli powder, 1 tbsp

  • Cumin powder, 1 tsp

  • Turmeric, 1 tsp

  • Garam masala powder, 1 tbsp

  • Lime juice, 1 tbsp

  • Bay leaves, 3

  • Black pepper corns, 6

  • Water, 1 cup

  • Oil, 2 tbsp

  • Cilantro leaves, 1 cup, finely chopped


Recipe-

Heat 2 tbsp oil in a sauce pan on medium heat. To this add bay leaves, black pepper corns, finely chopped garlic, green chillies, ginger and dried red chillies. Let it heat for a minute, and then add chopped onion. Add 1 tsp salt and let it cook on medium heat. Add 1 cup finely chopped tomatoes and let it cook for 5 mins.

Now add in prawns and mushrooms. Cover and cook for about 6-8 mins. Then add the spices - chilli powder, cumin powder and turmeric. Let it cook for another few minutes. Add in 2 cups of chopped spinach to this and cook for 5 mins with 1/2 cup water cook for another 2 minutes.


Garnish with fresh cilantro and 2 tbsp lime juice. Serve this hot with some rice and Enjoy !!
