Coconut Fish Curry

This delicious, spicy, creamy and sweet coconut flavored salmon curry is what gives the meals a whole another level of happiness !! 🍛

This heart healthy recipe simply comes together in 1 pot and in less than an hour.


Coconut Fish Curry

Ingredients -

  • Salmon Filltets, frozen or fresh

  • Onion, 2 medium, roughly chopped

  • Tomatoes, 2, roughly chopped

  • Garlic, 3, roughly chopped

  • Ginger, 1 inch

  • Ginger garlic paste, 2 tbsp

  • Green Chillies, 4

  • Red chillies, 4

  • Coconut milk, 2 cup

  • Salt, 1 tbsp

  • Chilli powder, 2 tbsp

  • Coriander powder, 1 tbsp

  • Turmeric, 1 tsp

  • Garam masala powder, 1 tbsp

  • Fish curry Masala, 1 tbsp

  • Lime juice, 1 tbsp

  • Oil, 3 tbsp

Recipe

Marinating Salmon-

Mix together 1 tbsp chilli powder, coriander powder, ginger garlic paste with 1 tsp of turmeric and 2 tbsp lime juice. Add 1 tsp salt. Make a paste and apply it to salmon. Let it sit for atleast 45 mins.


Curry-

Heat oil in a pan on medium heat. Put roughly chopped dried red chillies, garlic cloves, piece of ginger. Saute for a min and then add chopped onions. Add 1 tsp salt and cook for 5 minutes. Then, add in tomatoes. Mix and let it cook for 5 mins. Turn off the heat and let it cool for 15 mins and then blend it into a smooth paste.


Now transfer the paste into the same pan and add 1 tbsp fish curry masala. Cook for another 8 minutes on medium heat. Then add 2 cups coconut milk and add the marinated salmon pieces into it. Cover and let it cook on low flame for 10 mins. Stir gently every 4 min and let it cover and cook. Turn off the heat.


Add fresh coriander on top and let it sit for 10-15 mins before serving.

Enjoy comforting hot salmon curry with rice.
