Trying out different fish curries is never a bad idea and this one comes together quickly with the most basic ingredients giving coconut a skip and turns out so flavorful and delicious !!
Madras Fish Curry
Ingredients -
Salmon Filltets, frozen or fresh
Onion, 1 large, finely chopped
Tomatoes, 1, finely chopped
Tamarind pulp, 3 tbsp
Garlic, 2, finely chopped
Ginger, 1 inch, grated
Ginger garlic paste, 2 tbsp
Green Chillies, 4
Red chillies, 2
Curry Leaves, 8-10
Bay leaves, 3
Black pepper corns, 6
Mustard seeds, 1 tbsp
Oil, 4 tbsp
Salt, 1 tbsp
Chilli powder, 1 tbsp
Turmeric, 1 tsp
Garam masala powder, 1 tbsp
Fish curry Masala, 2 tbsp
Lime juice, 1 tbsp
Cilantro leaves,1 cup, finely chopped
Water, 1 cup
Recipe
In a pan on medium heat add oil. Let it heat. Let it sputter then add about chopped garlic, green chillies, dry red chillies, curry leaves. Saute for a minute.
Add 1 chopped red onion and cook for 8 mins until onions are translucent. Add in tomatoes chopped with 1/2 cup tamarind pulp and cook until tomatoes are soft and cooked.
Add in spices - turmeric, chilli powder, garam masala and salt. Cook for another 2 minutes.
Now add in salmon fillets with 1 cup water. Add fish curry masala. Cover and cook on low flame for 10 minutes. Add 1/2 cup water and cook again for 2-4 mins.
Garnish with fresh chopped cilantro and Enjoy with a bowl of steamed rice !!
